Raspberry pie




A couples of days in Sölvesborg. It had been a long time since I visited it. It was surprisingly warm and it felt good. It was very nice and Bodil and Håkan made superb food. I won't forget the Bodil's raspberry pie. Thank you both.

Lake and Forest

My time in Sweden was, as always, special and connected with Nature. A few days in Småland mean family, nice food, forest, walks, bike rides... 

Last week Jakob and I were there and we took the boat and fished some crawfish, not so many, but enough to make a nice dinner. And we was lucky enough to find some wild mushrooms also. I really love them and specially, I love to gather them. In Sweden and Spain there are specific words for difference types of mushrooms. The kantarell is the most treasured for the swedes.

The swedes during August eat crawfish and it is very traditional do a special party for the occasion, KräftskivorWell...we didn't do the party but we did eat them. We had crawfish and wild mushrooms and Jakob made an interpretation of Mar y Montaña, a catalan dish which combines food from mountains and sea, as chicken with crayfish or lobster or rice with meat and sea food.

Summer lunch

 
I can't believe that we're actually having such a nice weather. It won't last much longer so we've to seize the opportunity and eat outside!!

Today Jakob did all the cooking and managed to do a superb lunch with the few things that we had. A fresh salad with some tomatoes and cucumber, some grillad spinach and red onion from our garden and a light fritatta. All accompanied with naan bread (bought...).

Fritatta (rösti/råraka)

Two potatoes
One small onion
One egg
Herbs
Salt&pepper

Grate the potatoes and onion on a bowl and mix with the egg. Add some nice herbs (I took oregano, basil and thyme from the garden). Salt and pepper.

Fry until golden in a sauce pan with olive oil.

Olivada


I bought the olives with the only intention of eating them like they are but...then, I really don't know why, I though about olivada. I'm not a big fan of it but I wanted to try to do it at home. It was surprisingly easy and the result was quite nice. Maybe next time I'll putt less garlic...

It's delicious with some bread or to added on some roasted vegetables.

RECIPE

a bunch of kalamata olives
1 garlic clove or less ( It's your call...)
a pinch of salt
two spoons of olive oil
rosemary

Crus the garlic in a mortar and add the chopped olives, the salt and the olive oil. Work it until it becomes a good mixture. Add some rosemary. What I said...a piece of cake!

Scotland

Our trip to Scotland was a wonderful experience and a food trip as well. I have been eating salmon almost every day for two weeks but I have also tried for fantastic prawns or scallops.

Difficult forgetting that indulgent muffin after a long walk. At Jann's on Isle of Skye.


And...those greats ales from isles of Mull and Skye.
